A quick and easy lunch, a meal made of the remains I found in the fridge. As long as there is bread and some sort of cheese, this goes with almost every topping or “leftovers“. In this case: goats’ cheese, a few slices of Emmentaler and a bit of zucchini and farmers´ bacon. All ingredients work with a variety of dishes, but also make a pretty good gourmet sandwich.
Pre-heat the oven to 200 to 220 degrees and drop some olive oil on the bread rolls. Spread the goats’ cheese on one part and put the Emmentaler or any sliced cheese on the other. Top the goats’ cheese with bacon and the sliced cheese with zucchini. Off in the oven it goes for 10 to 15 minutes; add some fresh tomatoes for a sweet touch.
